You will never guess what i found in the freezer!
A venison roast!
I can't tell you how excited I was! You see, we had a person living us who cooked the last venison roast (ruined it, actually) in December (some time ago). I was so bummed because I thought that was the last venison roast we had, and it was ruined. It was edible, but it was totally tasteless because she does not know how to use herbs and spices at all.
Anyway, I took that baby out of the freezer yesterday and it's in the crockpot today with smoked paprika, dry mustard, kosher salt, ground pepper, thyme, white pepper, brown sugar, chili powder.... cannot wait to get home today!!!!

Well, I'm planning to cook some chicken breasts tonight - but have no idea how I'm going to cook them. . . .
We have a lot of salad, too... and I've been experimenting with new ways with sweet potatoes.
Last time I made sweet potatoes, I boiled them and mashed them with Chinese Five Spice powder. It really needed something else, but not really sure what.
(I read somewhere that white potates aren't really all that great for you, something about the way they spike your blood sugar or something like that - so I'm trying to incorporate more sweet potatoes in our diet.)

Over the weekend, I made a pot roast with buffalo. Very tasty! A quart of beef broth, buffalo chuck roast, a large onion, carrots, and..........a sweet potato. Fresh rosemary, thyme, sage and a bay leaf.
I'll make this one again.

We had steamed codfish and lots and lots of veggies. Very healthy :-)
Turkey Devonshire with Dr. Atkins cheese sauce, rice mix cooked in vegetable stock and asparagus. The turkey and cheese sauce were great, the rice was cooked correct but was on the bland side, needed more seansoning. The asparagus was a disaster, it was canned (how that got through the door I can't believe) and never used it before. I was finishing the bacon and told the wife to saute the asparagus, it was like mush :blink. Never used canned asparagus before or again, only fresh or in a pinch frozen. Tomorrow.... um I have some frozen cod ???

On Saturday I made chicken and onions with black pepper sauce (Trader Joe's). Very good! Paired with rice & veggies.
Sunday, I went out to eat at Red Robin (burgers) after church, so I just ate fruit for the rest the day.
Tonight I'm having something with shrimp, but I don't know what!
