OK, I confess. I watched Martha Stewart today. On her show, she featured chefs who use cutting edge ideas and technologies to create new dishes. I was particularly impressed with Grant Archatz.
Grant, formerly from Michigan, is now a chef at an avant garde restaurant in Chicago. In 2007, Grant was diagnosed with cancer of the tongue. It was first recommended that the tongue be removed, but instead treatments were used that were able to save it, but he lost his tastebuds (later restored). Grant focused on the sense of smell and memory to create new, delectable dishes. Many of his dishes were inspired from his childhood in Michigan, particularly hunting trips with his father.
