I did tomatoes, pickles, applesauce.
what kind of pickles did you make ? Dill or sweet?
I made and canned a lot of applesauce this year - thanks to a bumper crop of apples from our apple tree![]()

Speaking of pickles, I had seen Alton Brown do a show on making pickles. He did bread and butter so that's what I did too. I also included cauliflower because I love pickled cauliflower. It's a texture thing I guess. :)
Got all the stuff, made it, but the pickles were too mushy when bitten into. They just didn't have the crispness that I like. So I just left them alone.
So not too long ago my wife asked me if I wanted to throw them away, and I tasted them one more time and they were great! The problem was I was trying to taste them too soon. Just needed to give them more time in the refrigerator.
Look, as it were, through a telescope that will bring it up near to you; look into hell, and hear them groan; then turn the glass upwards and look at heaven, and see the saints there, in their white robes, with their harps in their hands, and hear them sing the song of redeeming love; and ask yourself--Is it possible, that I should prevail with God to elevate the sinner there? Some of the best pickles I've had were made by an older friend of mine in the mountains of NC. She used an Amish recipe that called for red hots (the candies) and the pickles were reddish in color. They were sooooo good!!

Are any of you canning food this summer? I can all year round but lately I've canned Bread and Butter Pickles, Kosher Dill Pickles, Strawberry Ginger Ale Jam, Cranberry Sauce, BBQ Sauce, Marinara Sauce, Spaghetti Sauce with Meatballs, and Blueberry Jam.

I'd love to can more (any really) but the garden produces enough for us to eat but not enough to can and I really don't have the time or the facilities to preserve and store (you'd have to see my kitchen to understand that)
We've done dill pickles and jalapenos. Not sure exactly what you mean by 'canned', but we pickled them in jars.

Last year we did a lot of canning, tomatoes, pears, peaches and some pickles. We're just getting started this year, a couple days ago I pressure canned a bunch of green beans.
I'm looking forward to doing crock pickles this year, last year I made it for the first time and they turned out great.
